Baked French Toast Casserole

Here's a delicious baked french toast casserole that would be a wonderful treat for your family.

Ingredients:

  • 12 slices day old bread, crust removed
  • 2 8 oz packages cream cheese
  • 1 cup fresh or frozen blueberries
  • Dozen Eggs
  • 2 cups milk
  • 1/2 cup syrup

Cut bread into 1 inch cubes; place half in greased 9 X 13 inch dish. Cut cream cheese into 1 inch cubes; place over bread. In large bowl, beat eggs: add milk and syrup and mix well. Pour over bread mixture. Cover and chill 8 hours or overnight. Remove from fridge 30 minutes before baking. Cover with foil and bake at 350 degrees for 30 minutes. Uncover and bake 25-30 minutes more, until center is set.

Sauce

  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 cup blueberries
  • 1 tablespoon butter

In a saucepan, combine sugar and cornstarch; add water. Bring to a boil for 3 minutes. Stir in blueberries; reduce heat. Simmer 8-10 minutes or until blueberries burst. Stir in butter. Pour over French toast to serve. This sauce can also be used for your pancakes.

This French Toast Casserole Recipe would be wonderful to make up the night before a holiday, and serve to your family/guests the following morning.
