Beef and Rice Casserole
Thanks Fran, from Texas for this Beef and Rice Casserole recipe. Ingredients: - 2 cups leftover roast beef, chopped (or any kind of leftover cooked meat.)
- 1 small onion, finely chopped
- salt and pepper to taste
- 2/3 cup uncooked instant rice (Minute Rice)
- 1 15 oz. can diced tomatoes (you could use ro-tel, if you like it spicy!)
- 2 Tablespoons of butter or margarine
Directions for beef and rice casserole: Combine meat, chopped onion, salt and pepper, instant rice, and tomatoes into a greased casserole dish. Dot the top with butter. Cook at 300 degrees for 45 minutes. Enjoy this super easy casserole recipe. This is great when you have some leftover meat that you don't know what to do with, and you need a quick dinner idea.
