Beef Enchilada Casserole Recipe

Ingredients for Beef Enchilada Casserole Recipe:- 1 1/2 lb. hamburger meat
- 1 small onion chopped
- 1 lb Velveeta cheese(I use the Mexican flavor)
- 1 can Ro-Tel tomatoes (I use the HOT)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- shredded cheese to taste
- 1 pkg. flour tortillas (10), can use corn as well
Directions: Brown hamburger meat with onion; drain. Melt cheese in meat mixture. In separate bowl mix the two soups and Ro-Tel.


Tear 2-3 tortillas into pieces and put inside an 11 X 13 baking dish.

Use less than half of the soup mixture and put over tortillas (you want more left for the top layer.)
Spoon your meat evenly throughout the pan.


Top with another layer of torn tortillas.

And then the rest of the soup mixture. I also added a layer of shredded cheddar cheese on top.


Bake at 350 until hot and bubbly, about 35 minutes.Serves 6 to 8.
