Carrot Casserole Recipe

Ingredients for Carrot Casserole Recipe:

  • 1/3 cup chopped onion
  • 1/3 cup shredded Cheddar cheese
  • ¼ cup butter or margarine
  • 2 Tbsp water
  • 2 cups soft bread crumbs
  • 2 ½ cup sliced cooked carrots
  • ½ tsp. salt
  • ¼ cup sliced ripe olives
  • Dash of pepper
  • ¼ cup sliced water chestnuts


Saute onion in butter until lightly browned. Mix with bread crumbs, salt, pepper, cheese and water.

Combine 1 cup of carrots with olives and water chestnuts.

Place cheddar carrots in greased 1 quart casserole dish.

Cover with crumbs mixture. Arrange remaining carrots in overlapping circle on crumbs around edge of casserole.

Cover and bake at 350 for 20 minutes. Uncover. Brown under broiler.

Serves 4.
