Chicken and Apple Casserole Recipe

Serves 4
Cooking Time: 45 mins
Preparation: 15 mins
Ingredients:
- 1 pound uncooked chicken breast cut into cubes
- 16 oz. chicken stock (or stock cubes and water)
- 1/4 cup apple cider vinegar
- 4 cloves
- 1 potato - peeled and cut into small cubes
- 2 carrots - peeled and finely sliced
- 4 red apples - peeled, cored and thickly sliced
- 1 cup unsweetened apple sauce
- 1 TB Dijon mustard
- 1 pinch Nutmeg
Directions:Fry the chicken in oil for 5 minutes until golden brown.
Add nutmeg, mustard and seasoning and stir to coat the chicken.
Add chicken stock, vinegar, cloves, potatoes and carrots.
Bring to a boil, cover and simmer for about 20 minutes.
Add the apples and cook for another 10 minutes.
Add the apple sauce and cook for a final 5 minutes.
