Chicken Corn Bread Casserole
Ingredients for Chicken Corn Bread Casserole: A great way to use up leftover corn bread! - 4 cups corn bread, crumbled
- 1/4 cup green pepper, chopped
- 1/4 cup green onion, chopped
- 1/4 cup celery, chopped
- 1 1/2 cup cooked chicken, coarsely chopped
- 1 (10 3/4 oz.) cream of chicken soup
- 1 1/2 cups chicken broth
Directions: Combine corn bread, peppers, onion and celery. Place half of the mixture in a 2 quart baking dish. Spread chicken over corn bread. Combine soup and broth. Pour over chicken. Place remaining corn bread mixture evenly over chicken, pressing down to moisten and compact. Set aside for 20 minutes. Bake at 350 degrees for 45 minutes. Variation: Add black pepper, poultry seasoning, sage and/or Old Bay seasoning. Makes 8-10 servings.
