Ham and Potato Casserole
Here's a delicious ham and potato casserole. If you're looking for a leftover ham casserole recipe, this is a great one to use. Ingredients for ham casserole recipe: - 2 2/3 cup water
- 1/4 cup butter
- 1 cup milk
- 2 2/3 cup instant mashed potato flakes
- 1/4 cup finely chopped onion
- 1/8 tsp. pepper
- 9 oz package frozen spinach, thawed and well drained
- 8 oz sour cream
- 3 oz cream cheese, softened
- 2 eggs
- 3 cups cubed ham
- 4 oz. shredded cheddar cheese
Directions: Heat oven to 350 degrees. Butter a 9 X 13 casserole dish. In a large saucepan, combine water, butter, and salt. Bring to a rolling boil and remove from heat. Stir in milk and potato flakes with fork. (you can use real mashed potatoes-if you have them leftover or want to make them) Set aside. Combine onion, pepper, well drained spinach, sour cream, cream cheese and eggs. Mix well and spread into casserole dish. Sprinkle ham over spinach mixture. Top with hot mashed potatoes. Cover with foil. Bake at 350 for 35-40 minutes or until it begins to bubble at edges. Remove foil. Sprinkle cheese on top, and return to oven uncovered for 5 minutes or until cheese is melted.
