Squash Casserole Recipe

Look no further for a yummy squash casserole recipe, this one's delish.

Ingredients for Summer Squash Casserole:

  • 3 lbs. yellow squash, sliced
  • 1 onion, chopped
  • 3 TBsp. butter
  • 2 TBsp. cornstarch
  • 1 Cup milk
  • 4 oz. Velveeta Cheese
  • 2 cups crushed crackers
  • 4 TBsp. butter

Directions:

Boil squash and onion in salted water until tender. While squash is cooking, prepare topping for dish.

Melt 4 tablespoons butter in skillet. Saute crackers in margarine until crisp and brown. Set aside.

Make a white sauce out of remaining ingredients. Melt 3 tablespoons butter in saucepan over low heat. Blend in cornstarch and stir until bubbly.

Add milk. Stir constantly until mixture bubbles and thickens. Add cheese and stir until melted.

Arrange squash in baking pan. Pour sauce over squash and top with crackers. Bake at 350 degrees for 30 minutes or until hot and bubbly.

Enjoy this yellow squash casserole.
