Summer Squash Casserole
A summer squash casserole is a perfect way to use up squash from your garden. Here's the recipe. Ingredients: - 2-3 Yellow Squash
- 1 can Ro-Tel Tomatoes
- 1 pound ground beef
- 1/2 small onion, chopped
- 1 package taco seasoning
- 2 cups Fritos
- 2 cups grated cheddar cheese
Directions: Slice squash into thin rounds. Brown ground beef with onion and drain the grease off. Add taco seasoning and can of Ro-Tel tomatoes to the beef. In an 8X11 casserole dish, layer in this order: squash rounds, meat mixture, fritos, then cheese. Bake in a 350 degree oven for 25 minutes.
