Sweet Potato Casserole with PecansIngredients for Pecan Sweet Potato Casserole: - 4 cups cooked and mashed sweet potatoes (about 3-4 large)
- 1 cup sugar
- 1/2 cup melted butter
- 2 beaten eggs
- 1 tsp. vanilla
- 1/3 c. milk
Combine all ingredients in a large bowl until well blended. Pour into greased 2 quart shallow baking dish.Sprinkle with topping (below) and bake at 350 degrees for 30-40 minutes. Topping: - 1/2 cup packed brown sugar
- 1/4 cup flour
- 1/4 tsp cinnamon
- 2 1/2 Tbsp. melted butter
- 1/2 cup chopped pecans
